A proper insiders’tip for gourmets in Mallorca are the restaurants of the Fundacio Amadip Esment. The foundation for people with special needs provides them – apart from other artisan areas – the opportunity to build up a career in the restaurant or kitchen. This venture is supervised by head chef Toni Martorell, who did already work with excellent chefs, such as Marc Fosh and Rafael Sánchez. There are already two restaurants in Mallorca, offering culinary delights: In Palmanova in a very modern ambience or in the old town of Palma. Here you can indulge in an amazingly tasty three course meal for little money. On Friday nights a taste set meal („Menu de degustación“) is offered: Gazpacho from watermelon seasoned with balsamic vinegar, beef Carpaccio with a green bean salad, sea bass filet with vegetarian lasagna and parmesan cream, knuckle of lamb with biryani sauce and for dessert pannacotta with mint and coulis from red berries are only some of the delicious dishes on the plate. Amadip Esment even has its own fields to grow organic vegetables that are directly processed in the kitchen or for sale in a little shop of the organization.
