You reach the property via a gravel path that winds through the beautifully trimmed trees after leaving a road with views of a landscape so typical of this region. Once you go through the door, the Walloon countryside gives way to a powerful impression of modernity and a fabulous contrast: The 2-star restaurant L’Air du Temps has taken just two years to make its mark on a landscape of fields and country lanes. And as though the typical white building and its elegant design were not enough, the dishes are also highly original yet familiar at the same time. They are a subtle combination of local products and masterful technique.
This gastronomic excellence is the direct consequence of a prodigious connection between the Korean-born Belgian chef, Sang-Hoon Degeimbre and the gardener Benoît Blairvacq, who tends the sublime garden surrounding the restaurant. Together they design the menu throughout the seasons, focusing on local and rare products to create dishes that are audacious, high in colour and full of surprises. The menu will delight lovers of kitchen gardens and authentic dishes that leave no doubt as to what you are eating. Nothing defines the work and the desire to share that are present in the offerings of this restaurant than the gastronomic masterpiece called Ton rouge, that pays tribute to the threatened tuna fish (‘thon’ in French), via the absence thereof in an explicit sauce.
