If you have time and feel like to work off in the Christmas bakery, then try the simple Canary Christmas recipe "Truchas de Cabello de Ángel". These are sweet dumplings filled with pumpkin jam. Translated literally, however, they are filled with angel hair:
Ingredients:
- 500 g flour
- 125 g lard or butter
- 190 ml water
- 1 teaspoon of salt
- 1 ½ teaspoon of anise
- pumpkin jam
- sunflower oil for frying
- normal sugar
Preparation:
Heat the water and add the salt. Mix the lard or butter with the flour and add the anise. Knead the mass through properly. Now, add the heated water slowly, under constant kneading, to the dough until you will have a smooth and homogeneous mass. Let the dough rest at room temperature for about 15 minutes. Spread the dough on a work surface with flour till it is about 1 mm thick. Prick out circular pieces. Now, place a teaspoon of pumpkin jam on each of these circles. Then you can slightly moisten the edges with water, so that they better stick together when you close them with a fork. Heat the oil in the pan and put the dumplings in. Once they are golden brown, sprinkle them with sugar. Let these delicious dumplings cool down and then you can enjoy a bit of Canary Christmas.
