Master class : Matthew Kenney’s Carrot Soup
Serves 4 to 6
1 lb. carrots
1 T olive oil
1 tsp. salt
1/8 tsp. ground cumin seeds
1/8 tsp. ground fennel seeds
1/8 tsp. ground peppercorn
1/2 tsp. coriander seeds
1/8 tsp. caraway seeds
1 quart vegetable stock
2 bay leaves
2 T lemon juice
1 lemon, zested
Preheat oven to 375 degrees Fahrenheit.
Peel and cut the carrots in large pieces. Toss carrots in olive oil and salt. Roast the carrots at 375 degrees for 45 minutes.
Peel and slice the shallot. Sauté the shallot in olive oil and the spices. Add the stock, salt, and carrots to the pot. Bring to a boil and then add the bay leaves, and lower to simmer. Simmer for 30 minutes. Remove bay leaves. Season with lemon juice and zest. Blend until smooth.
