The sun-speckled floor of Maremma’s woodland creates a fairy tale path towards the medieval village of Torcella. However, it is not a gingerbread house we find at the end of this trail, but something equally tempting; the Tuscan workshop of artisan salami and cured meat producer Silvano Mori.
In his simple uniform of a white apron, he takes pride in running a tight ship at his small family business Salumificio Mori. Little would anyone suspect that with a staff of six - including his wife, daughter and son-in-law - he produces some of the best quality and most sought after salumi in Italy.
Salumificio Mori has found its way to tables of State, high profile celebrities and royalty such as our very own Queen, William and Kate who reportedly had it for their wedding and now place weekly orders.
The variety and quality of meats this humble artisan produces is breath taking; from the Seasoned Salami laced with black truffles (Prince William’s favourite) to one with DOCG Morellino di Scansano wine (Kate’s favourite) from spicy finocchiona (wild boar salami) to a wide range that includes salami infused with cherries, berries, pistachios and porcini mushrooms.
However, Silvano’s secret to his success lies in his determination to create niche, quality products therefore reviving ancient recipes using traditional process: ‘Everything starts with the selection of meat of the highest quality,’ he states matter-of-a-factly. ‘Everything we make is strictly handcrafted by members of the Mori family’.
