Italy is the country of pizza - that's for sure. But where can you eat the best pizza? In Radicondoli in the province of Siena, the Vatti brothers serve the best pizza in the country in their restaurant “La Pergola”. The Gambero Rosso guide "Pizzerie d’Italia 2020" confirmed this again with a total of 91 points.

The presentation took place in the rowing club of Naples. The jury paid particular attention to 3 criteria: the weight of the pizza, the entire process from the dough to the topping and baking and, as a third point, the service and the range of drinks offered by the pizzeria. The "La Pergola" was praised thanks to the great work of Federico Vatti, particularly in the area of wine selection, which allows the customer to taste an steadily increasing selection of excellent wines from all over Italy.

Other criteria that distinguish an excellent from a normal pizzeria are the selection of the flour and the best raw materials, the recipe of the dough, the constant willingness to innovate and the respect for local products. Out of 700 rated places, only 80 pizzerias were awarded the prestigious prize. In the province of Siena, the pizzeria "La Pergola" is the only restaurant that can today boast of the "Tre Spicchi" (three cloves) - the symbol of the Gambero Rosso guide.

For Tommaso Vatti, the renewed confirmation is "a great recognition of the work that we have done in the recent years, a great honor and a motivation to continue our research on dough, raw materials and local products."
