A journey to Kaysersberg – idyllically nestled about ten kilometers northwest of Colmar in the heart of Alsace – reveals far more than a picturesque postcard scene. Stepping into Le Chambard means discovering its vibrant heart. For 25 years, Olivier and Patricia Nasti have run a sanctuary for epicures within an 18th-century historic estate, proving just how approachable, warm, and relaxed fine dining can be.
The venerable property blends effortlessly into the backdrop of ancient timbered houses, winding alleys, and gently sloping vineyards. The small town itself offers immense charm, but it is the Nasti family that has brought this place world acclaim. Since taking over the estate in 2000, the couple has tirelessly crafted their life’s work with unwavering passion: a five-star hotel belonging to the Relais & Châteaux association, the two-star Michelin gourmet restaurant La Table d’Olivier Nasti, a traditional Winstub, an in-house bakery, and a artisanal chocolate shop.
Despite these impressive accolades, elite detachment is nowhere to be found. The true secret of the house lies in its people. Meeting Olivier Nasti, one immediately senses his distinct composure and grounded nature. Despite a remarkable career – honored as Meilleur Ouvrier de France and awarded two Michelin stars – the chef engages with his guests with deep, quiet humility.
Nasti is down-to-earth: a hunter, gatherer, and host. He often ventures into the forests of the Vosges at daybreak to gather herbs, mushrooms, and fresh inspiration for his culinary creations. Beside the renowned chef stands his wife, Patricia Nasti, the soul of the house. She welcomes guests with such genuine warmth that one feels instantly at home. It was also Patricia who did away with stiff ties in service, introducing a lighter, more relaxed atmosphere.

Guests can experience this calm and harmonious team dynamic firsthand, even during high-pressure moments. During our visit, the traditional Coq au Riesling dinner at the Winstub was about to begin – an event held in collaboration with the renowned Domaine Weinbach winery. The highlight focused on a classic of Alsatian gastronomy: tender poultry, bacon, and mushrooms paired with the fine acidity of local Riesling.
A glance through the window of the open kitchen reveals intense preparation, tossing, and plating under pressure. Yet, there is not a single trace of rush. The team works hand in hand, tightly focused and flawlessly synchronized. Because a proper vintage can never be lacking in Alsatian vineyards, head sommelier Jean-Baptiste Klein – named “Sommelier of the Year 2024” by the Gault & Millau guide – elevates every dish with an exquisite wine pairing.
Whether in the refined fine dining restaurant or the cozy Winstub, which joined the two-star dining room in 2013: with light woods, red-checkered cushions, and large oak tables, Nasti honors Alsatian heritage. Respect for the product, the animal, and the producer clearly defines every single course.
For Olivier Nasti, hunting is a year-round passion. As an autumn highlight, the fourth edition of the Festival de la Chasse will take place at Le Chambard from October 12 to November 17, 2026. As part of this festival, the Championnat du Monde de la Tourte de Gibier will also be hosted on October 27, 2026. In this wild game pie world championship, international talents compete to create the demanding classic Pithiviers – a delicate game pie encased in golden puff pastry.
Breakfast the following morning in the Winstub is equally memorable. Alongside regional farmhouse cheeses, the extraordinary pastry selection from the estate’s own bakery, Levain, delights the palate. A absolute must-try is the traditional Alsatian Kougelhopf – the local variation of the classic bundt cake, baked using natural sourdough.
Following this feast, a walk leads directly from Le Chambard into the vineyards surrounding Kaysersberg. Even a light autumn drizzle cannot diminish the beauty of the moment. As the fog drifts gently over the slopes and sweeping views overlook the historic town, the weather is instantly forgotten. Before departing, a visit to the in-house Chocolaterie Skulptur across the street is essential. With one of the signature “Manala” chocolate figures in hand – a tribute to the region’s traditional icon, filled with light vanilla marshmallow – guests take a sweet keepsake home.
